This week, on Wednesday, we're doing Laab Gai! This intensely flavorful salad is the unofficial national dish of Laos but has been adopted in the north of Thailand in the Isan region. It's a mix of home-ground chicken breast meat, fresh herbs, vegetables, a tangy lime dressing, topped with kaffir-lime rice powder. Served with a side of Thai sticky rice. As usual...gluten-free!
Maybe I should explain the role of the sticky rice...
Sticky rice works as a food delivery device and is placed in the hand and formed into a little flat cup (if that makes sense?). You can then pinch your salad and eat it with the rice. You can also form it into a ball and dip it in the sauce or dressing. It's meant to be eaten with your dish, bite for bite. Not mixed in as a whole. Lesson over. : )
This dish can be served mild or spicy. I'll leave that up to you and serve the majority of the spice on the side. If you eat it without adding any additional spice, there will only be a slight kick to it.
