OK, that madness out for the way...this week I'll be serving Tom Kha Gai, literally translated, Soup Galangal Chicken. You may have had this before but probably not quite as intense as the really authentic one I make. This soup bursts with bright flavors of galangal, lemon grass, kaffir lime, coconut milk and various other herbs, chicken and vegetables. Pretty low on the spicy scale but I always add extra Thai chilies on the side for you to include if desired. If you would like this vegetarian, please indicate when ordering, "soup-veg".

The second dish, I think, will be a good pairing with the soup. It's a dish I learned from my mentor, Chef Roongfah, and it's a mouthful. Phad Puk Rum Moo Group. Literally, Stir Fry Vegetable Mix with Crispy Pork Belly. This is a labor-intensive dish with lots of yummy vegetables and a savory sauce and finished with crispy marinated pork belly. This is served with Jasmine Rice. If you would like this vegetarian, please indicate when ordering, "Stir fry-veg".
