mmmmmm....Panang Curry Kabocha Squash Soup. People have been raving about this new dish. Maybe it's because my Panang curry paste is made from scratch or maybe because it's so perfect for a cold winter's night. It's almost a meal in itself.
Kabocha Squash is known as the sweetest of the squashes and pairs beautifully with the vibrancy of the Panang Curry Paste.
Lengthy process but so very worth it.
Squash, Panang curry paste, lemongrass, onion, ginger, makrut lime leaves, and a touch of sugar
Coconut cream and Coconut milk
It's so silky smooth and rich. Served with a garnish of spring onion and cilantro on the side.
Our main dish is your choice of either Grilled Flank Steak or our vegetarian alternative Grilled Portabella Mushroom both topped with Thai Chimichurri sauce.
Served with delicious Steamed Coconut Rice
