Curry Paste Party!

I know my clients love Thai food but I also know the idea of making your own fresh curry paste can be a bit much to take on in your own kitchen. The hours of sourcing ingredients, cutting them and grinding the ingredients in a mortar and pestle is a bit daunting, even to me, but the difference between fresh paste and canned paste is light years apart and worth the effort if made in larger quantities. I have some short cuts to teach you to make this job much, much easier!

So that's what I want to do with you on November 17th, from 1:00-4:00 in my private kitchen in Haymarket. First we'll make up two different types of curry pastes...I'm thinking Massaman (great for fall) and Green (everyone's favorite). One of the best parts of making your own paste is that you can create it to match your families spice level. You will have enough curry paste to take home to create a minimum of 5 dishes of each curry paste. The curry paste will last 2 weeks in the refrigerator or 2 months in the freezer.

Of course, we'll have to cook some up for instructional purposes, to show the pastes' versatility and to sample.

Finally, we'll prep all the ingredients you'll need to recreate the Massaman curry for your family that evening, including rice and a delicious mango dessert. Massaman curry is great served with fall vegetables like squash, potatoes, cauliflower and green beans. Or add chicken, if you like. A non-traditional Saturday dinner (unless you are Thai).

5 portions of Green Curry Paste (serves 10)

5 portions of Massaman Curry Paste (Serves 10)

Ingredients for Massaman Curry for a family of 4, vegetarian or chicken

Prepared Jasmine rice for 4

Ingredients for dessert for 4

Recipe book

 

$60 p/person (This will feed a family of 4...if you have a larger family or group of friends, add $10 per portion extra to be paid on day of event)
